Ingredients

  • 4 medium ripe tomatoes
  • Salt to taste
  • 9 oz full-fat mozzarella
  • 8 basil leaves, washed and dried
  • fresh ground pepper to taste
  • Extra virgin olive oil for drizzling

Instructions

  1. Core and cut the tomatoes into ¼ inch slices. Lightly salt, if desired.
  2. Layer tomatoes, cheese, and basil on a platter and sprinkle with salt and pepper; drizzle with olive oil, and serve.
