- 4 medium ripe tomatoes
- Salt to taste
- 9 oz full-fat mozzarella
- 8 basil leaves, washed and dried
- fresh ground pepper to taste
- Extra virgin olive oil for drizzling
- Core and cut the tomatoes into ¼ inch slices. Lightly salt, if desired.
